Awesome Recipe for Black Bean Stew

Taken from an article on Runner's World, this stew is healthy, tastes great, and is easy to make.


Ingredients:


1 Diced Onion or I use Celery
1 Can Diced Tomatoes, 28 oz.
2 Cans Black Beans, drained
1 Sliced Carrot
1 1/2 Cups Vegetable Broth
1 Cup Sliced Roasted Red Peppers
1 Tbsp Minced, Canned Chipotle Pepper in Adobo Sauce
Zest of 1 Orange
1 Tbsp Fresh Thyme
1 Tsp Cumin 
2 Tsp Canola Oil

Warm up 2 tsp canola oil in a pot. Cook 1 diced celery (or onion) & a sliced carrot for 5 minutes. Add two 15-ounce cans drained black beans, one 28-ounce can diced tomatoes, 1 1/2 cups vegetable broth, 1 cup sliced roasted red pepper, 1 tbsp minced canned chipotle pepper in adobo sauce, 1 tsp cumin, and salt and pepper. Simmer 15-20 minutes. Stir in the zest of an orange & 1 tbsp fresh thyme. Serve with diced avocado if you want to.
